“Salgado” Gastronomic Set at Erarta Café Restaurant
Erarta Сafé is proud to present a unique event: the gastronomic set combined with a visit of Sebastião Salgado's solo exhibition.
The “Genesis” exhibition by the world-famous documentary photographer is currently taking place at Erarta Museum of Contemporary Art and features more than two hundred photographs taken over eight years in the most beautiful and inaccessible places on Earth. Inspired by the artist’s masterpieces, Artem Grebenshchikov, the Head Chef of Erarta Café, has created a special menu of seven courses.
Menu:
-
Hearts of palm, caper leaves, lightly salted cucumber, cream cheese
-
Scallop, omul, beetroot cream, snow of horseradish and yogurt, apple
-
The first phalanx of crab, ice cream of avocado and cucumber
-
Tenderloin of deer, spicy cranberries, freeze–dried raspberries, crystalline salt
-
Top Blade Steak with black garlic, batata and carrot puree, cream of mint carrots, corn, and sea buckthorn sauce
-
English cream, mango jelly, coconut daсquoise, freeze-dried mango
-
Original Chocolate Candies
Each dish is dedicated to a certain photo series and represents a certain part of the world. The appetizer is made of pickled hearts of palm, symbolizing the major source of livelihood for the African people. The deer tartare is the reference to Salgado’s journey to Siberian Nenets tribes. And the desserts are worthy of special mention: “Sand Flood” is visually reminiscent of African sand dunes, and the trio of handmade chocolate candies of various cocoa beans is a tribute of Salgado’s love to Ethiopia and Rwanda.
Erarta Сafé gastronomic dining set is a new format of cultural entertainment based on visual, emotional and gustatory perception of contemporary art. Erarta Museum has long outgrown the classic format of “a place that exhibits artifacts”. Each visit to our museum is a social event, inspiring pastime, a good reason to meet and an outstanding emotional experience. The event of such format as Erarta gastronomic set will extend the guests’ horizons of gustatory impressions, and perception of new culinary forms and textures.
